I’m so excited to share my latest obsession…  Kale-Conut Juice!

🌱 A couple of handfuls of Kale
🌱 Meat of one young Coconut
🌱 Water from the same Coconut
🌱 (Approximately 1-2 cups)
🌱 2 Teaspoons of Cinnamon
🌱 1 Medium or Large Banana
🌱 2 Teaspoons of Coconut Nectar
🌱 One half cup of Ice

Blend all ingredients together in your Nutribullet or favorite blender and enjoy this yummy, healthy, anti-inflammatory drink!  🌞

Decadent Chocolate Raspberry Pudding! Easy & Yummy Vegan Recipe!

Oh my goodness… My entire family is in love with this “no-guilt” Vegan Chocolate Raspberry Pudding!

This decadent pudding is Creamy and Smooth, but it is so Healthy that even babies can enjoy this as a meal! ☺

The Avocado and Raw Cacao in this yummy recipe create a treat full of healthy protein and antioxidants! By adding Raspberries and Nibs on top, big kids like me can take this Chocolate Pudding to a super decadent level! 🍇

Chocolate Raspberry Pudding Ingredients:

🍘 2 Ripe Avocados (remove pits)
🍘 ¹/³ Cup Raw Cacao Powder (Or Cocoa powder)
🍘 2 Tbsp Coconut Nectar (or Maple syrup, Agave)
🍘 1 ½ Ripe Bananas (not too ripe)
🍘 ¹/8 teaspoon Sea Salt
🍘 ¼ teaspoon Ground Cinnamon
🍘 1 ½ teaspoons Vanilla extract
🍘  ¼ – ½ Cup Coconut Milk  (or Rice, Almond, Soy)

5 Yummy Secret Tips:

* Cinnamon is optional, but so healthy & yummy!

* Milk is optional, omit or reduce for thicker pudding. Add more milk if too thick.

* For more Chocolate taste, use Vegan Chocolate Milk instead of plain vegan milk!

* Add 2-3 Medjool Dates if you want more sweetness! Nectar & Dates can be omitted for less sugar content.

* Tofu instead of Avocado is another option. (We like Avocado best 🙂

3 Easy Instructions:

1) Place all ingredients in Food processor or Blender.

2) Blend/Process until it is all smooth & creamy.

3) Transfer to a bowl and allow to set in fridge for 1 hour +.

Chocolate Pudding Garnish:

🍇 Raspberries are a healthy & yummy topping!

🍇 Raw Cacao Nibs add a fun & healthy texture!

🍇 Rice Whipped Cream is a fun creamy twist!

🍊 Orange Zest in/on top is another Yummy idea with a punch!

Raspberries are considered a Super-Fruit and really carry a lot of healing power in every little berry. Like Cacao, the Raspberry is filled with yummy but healthy antioxidants!

According to a study in the “Journal of Agricultural and Food Chemistry” published in 2003, antioxidants are especially concentrated in cocoa, a product of cacao beans.

In this study, researchers compared the antioxidant capacity of black tea, green tea, red wine and cocoa, concluding that cocoa has the highest antioxidant activity among the four products and the greatest potential for health benefits.

Are Kids & Teens Drinking Enough Water? 8 Tips to Help Stay Hydrated: Yummy Infused Water Recipe!

I have a question for you, how much water do you and your kids ACTUALLY drink?  As a child, I primarily drank Tea, Kool-Aid and occasional Water.  I do remember adults occasionally stating the importance of water, but I didn’t take it seriously, nor did I understand how to make it a priority. Screenshot_2015-01-20-09-32-34 Today, Nephrologists (Kidney Doctors), report that more than ever, there is a high demand for Pediatric Nephrologists (Kidney Doctor for Kids & Teens).  This is due to kids being diagnosed with PAINFUL Kidney & Urinary Stones, which are often caused by a lack of water and junk food! Today, kids & teens have so many drink choices, why should they drink boring old water?

  • Every system in our body depends on water & helps youngsters thrive!
  • Water helps the brain function & will help detox their kidneys, liver & other vital organs.
  • Water carries nutrients to their cells & helps them digest food.
  • Water provides a moist environment for their ears, nose & throat systems.
  • Water is our primary chemical component & makes up 60% of weight.

How much water do kids & teens actually need?

  • Researchers have similar but varying ideas about water amount we should drink.
  • Pay close attention to your child’s symptoms, activity level & climate you live in.
  • Your child loses water by simply breathing, perspiring, urinating & pooping.
  • Kids must replenish water by consuming foods & drinks that contain water.
  • If severely dehydrated, provide real coconut water to replenish electrolytes.
  • Speak with a health professional if dehydration symptoms persist.

8 Tips to Help Kids Drink More Water:

  1. Always have clean & fresh tasting water on hand!
  2. Infuse water with Organic Fruits, Veggies & Herbs!
  3. Place a 16 oz water bottle by their night stand.
  4. Have child drink 8 oz (1 cup) before sleeping.
  5. Have child drink 16 oz (2 cups) upon awakening.
  6. Have them drink 2 cups, 1 hour before each meal. (48 oz total)
  7. Model behavior so your child will watch & learn.
  8. Buy your child a sports bottle they can keep with them at all times (at school, during lunch, after recess)!

Screenshot_2015-01-20-09-30-31The chart above may seem like a lot of water, but it really isn’t.  Remember, 60% of your body is made of water, so it is critical that children’s water is replenished on a daily basis.

Can a child be drinking too much water?  It is possible for someone to drink too much water (hyponatremia), but it is very rare, and mostly happens to people who are extreme athletes.

The above chart is only a guideline, it is important you adjust your kid’s water consumption if you live in a very hot/humid climate, if they are athletes or have a medical condition. This Organic fruit & herb infused water recipe is a great way to always have great tasting water!20150119_161959

ORGANIC STRAWBERRY, LEMON, CUCUMBER, MINT INFUSION:

♥  ½ Cup Sliced Lemons

♥  ½ Cup Sliced Strawberries

♥  ¾ Medium Cucumber, Sliced

♥  ¼ Cup of Mint Leaves

♥  1 Quart of Fresh Spring Water

Instructions:

♥  Prepare & Slice Fruits, Veggies, Herbs

♥  Place Your Mix at the Bottom of Jar

♥  Pour Your Water over the Mix

♥  Chill in your Fridge or Serve Room Temp.

Important Final Notes:

  1. On average, food can provide about 20% of total water intake. Watermelon & Spinach are at least 90% water weight.
  2. Pregnant or breast-feeding women need additional fluids to stay hydrated.
  3. Pineapple, Orange, Ginger is another great infusion for the family.

Raw Vegan Coconut Ceviche

Raw and Naked… Coconut is an Antimicrobial, Antioxidant, Anti-inflammatory and Analgesic… truly one of nature’s super-food miracles!

There are at least 17,000 studies describing the medicinal and nutritional effects of Coconut and Coconut oil on health. Over and over again various physicians, researchers, biologist, nutritionist and even pharmaceutical companies have all come to the same conclusion… Coconut is no foe, it can help so many aspects of our health!

Coconut Ceviche Ingredients:  

As seen above:

  • 2-4 Young Coconuts (cut to your preference)
  • 1/4 Teaspoon of Extra Virgin, Cold Pressed, Unrefined Coconut Oil
  • 2 Lemons (Juiced)
  • 2 Limes (Juiced)
  • 2 Large Avocados  (Cubed)
  • 1 Garlic Clove (Minced)
  • 1/2 Cup of Cilantro Leaves (Chopped or cut)
  • 1/4 Teaspoon of Sea Salt (or more to your taste)
  • 1-2 Large Tomatoes (Diced)
  • 1 Red Onion (Diced)
  • 1/2 Large Cucumber (Diced)
  • 1/4 Teaspoon of Pepper

Instructions:

First cut open the Coconut, drink the awesome Coconut water, then scoop out the meat with a spoon.20140910_193036  Screenshot_2014-09-10-20-58-20

Second, cut the coconut meat to your liking, then in a Large Bowl Mix in all of the Cucumber, 1/2 the onions, One tomato, 1/2 the Cilantro and All of the Juice from the Lemons and Limes and the Oil.  Next, Cover and set in your fridge to Marinade for 1-2 hours.

Third, when you are ready to serve it, mix in the Sea Salt, Pepper, Cilantro, the remaining Onion, the remaining Tomato, and the Avocado.

Lastly, taste it and see if you need more Lime/Lemon Juice… You are gonna need a lot of self control to not eat it all! 😉

If going to a party, I use the shelled coconuts as my serving dishes… I didn’t take a picture but it is a fabulous display piece and catches everyone’s eye 🙂

I serve it with my favorite gluten free chips and watch all the people devour it! 🙂  You will get all sorts of questions like what kind of fish is this… it’s Deelicious… and also, how do you cut open a Coconut?!?

There are many ways to do it, but I use the bottom edge of a Meat Cleaver while striking the coconut in a circular pattern.  I am a small framed woman, if I can do it… you can do it! It’s really easy once you get the hang of it! 🙂
