Decadent Chocolate Raspberry Pudding! Easy & Yummy Vegan Recipe!

Oh my goodness… My entire family is in love with this “no-guilt” Vegan Chocolate Raspberry Pudding!

This decadent pudding is Creamy and Smooth, but it is so Healthy that even babies can enjoy this as a meal! ☺

The Avocado and Raw Cacao in this yummy recipe create a treat full of healthy protein and antioxidants! By adding Raspberries and Nibs on top, big kids like me can take this Chocolate Pudding to a super decadent level! 🍇

Chocolate Raspberry Pudding Ingredients:

🍘 2 Ripe Avocados (remove pits)
🍘 ¹/³ Cup Raw Cacao Powder (Or Cocoa powder)
🍘 2 Tbsp Coconut Nectar (or Maple syrup, Agave)
🍘 1 ½ Ripe Bananas (not too ripe)
🍘 ¹/8 teaspoon Sea Salt
🍘 ¼ teaspoon Ground Cinnamon
🍘 1 ½ teaspoons Vanilla extract
🍘  ¼ – ½ Cup Coconut Milk  (or Rice, Almond, Soy)

5 Yummy Secret Tips:

* Cinnamon is optional, but so healthy & yummy!

* Milk is optional, omit or reduce for thicker pudding. Add more milk if too thick.

* For more Chocolate taste, use Vegan Chocolate Milk instead of plain vegan milk!

* Add 2-3 Medjool Dates if you want more sweetness! Nectar & Dates can be omitted for less sugar content.

* Tofu instead of Avocado is another option. (We like Avocado best 🙂

3 Easy Instructions:

1) Place all ingredients in Food processor or Blender.

2) Blend/Process until it is all smooth & creamy.

3) Transfer to a bowl and allow to set in fridge for 1 hour +.

Chocolate Pudding Garnish:

🍇 Raspberries are a healthy & yummy topping!

🍇 Raw Cacao Nibs add a fun & healthy texture!

🍇 Rice Whipped Cream is a fun creamy twist!

🍊 Orange Zest in/on top is another Yummy idea with a punch!

Raspberries are considered a Super-Fruit and really carry a lot of healing power in every little berry. Like Cacao, the Raspberry is filled with yummy but healthy antioxidants!

According to a study in the “Journal of Agricultural and Food Chemistry” published in 2003, antioxidants are especially concentrated in cocoa, a product of cacao beans.

In this study, researchers compared the antioxidant capacity of black tea, green tea, red wine and cocoa, concluding that cocoa has the highest antioxidant activity among the four products and the greatest potential for health benefits.

Woohoo!!! 😆☺☺☺

Yay! This means you can enjoy this decadent treat for breakfast or dessert! Your entire family will love every yummy healthy bite! ☺

Let me know if you have any other interesting twists!

Sending you everlasting health and wellness, xoxox!

Protein from Vegetables vs. Meat… What’s the big deal?

fruit at a foreign market

What you eat impacts everything from your skin to your bones to your cognitive abilities… It even contributes to how animals are treated in this world!

Ounce for ounce and Calorie for calorie… Broccoli and Kale provide more protein than Porterhouse steak!!!

Cooked Kale and Broccoli also provide more Vitamin A, Vitamin K, Vitamin C and Folate than Beef Short Loin and Porterhouse Steak.

Protein is a macro nutrient necessary for the proper growth and function of the human body. Although there are vegetables that have proteins, Harvard School of Public Health found that it critical to eat a variety of protein choices so you can get all of your Amino Acids! Growing evidence reveals high-protein food choices do play a role in health—but eating healthy protein sources like avocados, beans, or nuts in place of red meat can lower the risk of several diseases while lowering cruelty towards animals🌝.

High Protein Food Chart

A study from May 2012 by researchers at Brigham and Women’s Hospital found that saturated fats found in red meat and full-fat dairy products causes the brain to age more quickly than other kinds of fat. The good news is that you can slow brain aging by consuming healthy oils like Avocado, Coconut Oil and other monounsaturated fats.

This Protein Juice blend includes:

1/2 an Avocado
1 Cup of Cashews
3/4 Cup of Raspberries
3/4 Cup Mango
2 Cups of Mixed Greens (Spinach, Kale, Moringa )
1/4 Cup Cucumber
1 Cup of Coconut Water
1/2 Lemon
Protein Nutribullet bodhi and nutribullet

There is considerable debate over the amount of protein a person needs to consume per day, but the current recommended daily intake is listed below:

RDA Chart for Protein

Various studies show that eating even small amounts of red meat, especially processed red meat, on a regular basis is linked to increased Free Radicals, increased risk of Heart Disease and Stroke.

People who are Gluten Sensitive or have GI issues also tend to have low digestive enzymes and need to be extremely careful about eating meat, paying particular attention to added dyes, antibiotics and of course, gluten.

Meat is very high in fat, cholesterol and if non-organic, it has synthetic hormones. Many meat proteins in food are found to be responsible for food allergies and mucus in the gut?

Meat causes your body, mind and organs to age, where Organic Vegetables promote Anti-aging, they are high in Vitamins & Antioxidants, have good Fiber, low-fat Protein, and they are great for your Heart and Brain.

Try replacing red meat with healthy proteins such as this Protein Juice Blend above – you may greatly lower your risk of disease, you will be having cruelty free meals and discover that life can be Yummy Yummy Baby with out meat!

Vegan Coconut Nectar Pancakes… Yummy!

There are many delicious scents, tastes and sounds that remind me of my childhood, but one of my favorites is that of homemade pancakes luring me out of bed… well to be fair, the bacon along side my momma’s pancakes could’ve had a little something to do with the way I floated to the breakfast table.

Like many families, we were all very busy little bees… but the one thing we always did together was gather and eat breakfast, lunch and dinner together…

Now that I am a mommy, I do my best to carry on the traditions that brought me comfort… eating together and yummy pancakes!

1/4 Cup of Coconut flour
1 Cup of gluten free all purpose flour

1 Tablespoon ground flax seed
1 Tablespoon of Coconut Sugar
2 teaspoons Baking powder
2 Egg replacement
¼ teaspoon Sea salt
2 Tablespoons Coconut Agave Nectar
1 teaspoon Vanilla
1 1/2 Cups Coconut Milk (maybe 2)
1 Tablespoon of melted Coconut Oil
1/8 teaspoon xanthan gum (optional)

In a medium size mixing bowl, sift together flour, flax meal, baking powder, sugar, sea salt, xanthan gum.

In a separate bowl, combine Coconut Oil, Coconut Nectar, Vanilla, Egg relacer and Coconut milk.

Slowly mix in half of the liquid into dry bowl, stirring continuously, add the rest… ¼ cup at a time to avoid a runny batter (not all gluten free mixes are the same, adjust as needed).

Mix until you get the lumps out of the batter. You don’t want it to be too thick or too runny.

Usually about 1 cup + 2Tbsp (as needed)

On a greased (Coconut oil), heated griddle over medium heat, begin to cook pancakes approx a ¼ cup of the batter for each one. (Medium)

*Cook 3 minutes until they start to bubble around the edges, then flip. Cook for another 3 minutes.

Remove from pan and serve with Coconut Nectar on top, garnish with Blueberries and Raspberries!

They are sooo Yummy Yummy Baby!

See you soon! Dr. Dee 🙂

*Side note: some people add 1/8 teaspoon of xanthan gum to help them bind and better emulsify… I do without it, but use what works for you!
